Chicken with Garlic-Roasted Sweet Potatoes Recipe


I love a yummy baked dish, especially on Monday night. You can throw everything together and pop it into the oven for an easy start to the week. You can prepare this the day before and then have it ready for Monday too. Chicken is packed with protein while sweet potatoes provide an awesome nutritional punch. Sweet potatoes are high in vitamin B6 and vitamin C. They are also a great source of magnesium. Magnesium is sometimes known as the ‘anti-stress’ mineral. That’s got to be a good thing!

You can even get this ready the day before an pop it into the oven while you try one of my short workouts!


Serves: 4  Prep: 20 min + 2 hr.  Cook: 40 min.

Ingredients

  • 4 boneless skinless chicken breasts
  • ¼ cup olive oil
  • ¼ cup Dijon or whole grain mustard
  • ¼ cup raw honey (optional)
  • juice of half a lemon
  • 2 garlic cloves, peeled and minced
  • ½ tbsp paprika
  • ¼ tsp cayenne pepper
  • ¼ tsp red chilli flakes
  • sea salt and freshly ground black pepper

  • 2 cups sweet potatoes, peeled and cubed
  • 2 garlic cloves, peeled and minced
  • 1 tbsp olive oil
  • sea salt and freshly ground black pepper

 


Preparation

  1. Whisk all the ingredients for the chicken marinade in a glass bowl.
  2. Add the chicken breasts to the bowl. Cover and marinate in the refrigerator for 2 to 12 hours.
  3. Preheat your oven to 220 degrees C.
  4. In a bowl, combine all the ingredients for the sweet potatoes and toss until everything is well combined.
  5. Place the chicken breasts in a baking dish, and add the sweet potatoes around them.
  6. Bake in the oven for 30 to 40 minutes, or until the chicken is no longer pink and the sweet potatoes are soft.
